Easy Protein Cookies
I'm going to start by saying, I am no baker. I'm rubbish with measurements, never time anything, gone with the whole 'preheating is for squares' mantra and I can't follow instructions...
Matt can vouch for this. I even messed up 3 ingredient brownies. THREE INGREDIENTS!
However, I've found a kind of 'baking' I can do. Healthy stuff, chucked in a bowl, stirred and shoved in the oven.
My most recent effort was easy protein cookies. Which were actually so easy that I nailed them on the first try.
Here's what you need:
A cup of oats blended into a flour (I just used a mug - rebel)
A table spoon of honey
A table spoon of peanut butter (heaped)
A scoop of protein powder (I used Diet Whey from PHD)
A good lump of coconut oil melted down
A splash of milk to make it into a dough
Chopped up chocolate chunks... because chocolate
Tablespoon of coconut oil
Tablespoon of cocoa
Tsp of honey
Put all of the above in a bowl, stir until it's a doughy texture.
Scoop the mix out into biscuit shapes.
Bake for 10 minutes
Leave to coo.
Melt the chocolate topping together in a pan. Decorate the top in any way you fancy! Sprinkle with coconut, seeds or more chocolate...
It's really that simple!
